[Discussion] Genuine question about mixed-breed dogsDog Talks

Hello! I see a lot of posts here discussing unethical breeding practices associated with mixed breed pups such as doodles and others. After reading through countless posts and the entirety of their comments, I still have a question about it. I'm here to learn, and this is a genuine question, so please don't downvote me or be nasty!! I don't know much about dogs and dogs breeding and hoping to learn more.
Many comments suggest that the dogs that are used to breed these mixed-breed pups aren't health tested. From my understanding of what people are saying, breeders of real purebreds would not give their dogs to be bred for mixed-breeds. My question is why not? The research I've done about dogs in general is that all the breeds we have today were bred as mixes of other dogs over thousands of years. Even poodles, golden retrievers, Yorkshire terriers etc. are all mixes of other dogs that happened a long time ago. So, are we no longer breeding new breeds? Is it inherently unethical to mix breeds to make a new one, or is it just the way it's done today that's wrong? If it's just the way we're doing it that's wrong, why aren't ethical breeders breeding mixes? Are we just done with making new dog breeds? Again - I'm genuinely curious, not trying to support mixing or anything like that. I find the history of dog genetics interesting, so my question is more in that spirit.
